  • 3/4 cup coconut sugar
  • 1 egg
  • 1 tbsp molasses

  • 1.5 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1.75 cups old-fashioned oats
  • 3/4 cup raisins Soaked in orange juice for 15 minutes, then drained.

Instructions
 

  • Cream melted butter and Greek yogurt until fluffy (about 3 minutes).
  • Beat in coconut sugar, egg, and molasses until smooth.
  • Whisk together flour, cinnamon, baking soda, and nutmeg in a separate bowl.
  • Gradually fold in oats and soaked raisins until fully incorporated.
  • Scoop 1.5 tbsp portions onto a lined baking sheet and flatten slightly.
  • Bake at 325°F for 14 minutes, or until tops are cracked but centers are shiny.
  • Let cool for 5 minutes before transferring to a wire rack.

Notes

To keep cookies soft for days, store in an airtight container with a slice of bread.
