Ingredients
  

Dry Ingredients

  • cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter

Instructions
 

  • Whisk together the flour, baking powder, and salt in a mixing bowl until well combined.
  • In a separate bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  • Gently fold the wet ingredients into the dry ingredients, stirring just until combined. Do not overmix.
  • Preheat your mini waffle maker and lightly grease it with melted coconut oil or butter.
  • Pour about 2 tablespoons of batter into the waffle maker, close the lid, and cook for 3-4 minutes until golden brown.
  • Carefully remove the waffles and serve warm with your favorite toppings.
