Dough Base
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 6 tbsp cold butter grated for even distribution
- 3/4 cup buttermilk
Cinnamon Swirl
- 1/3 cup softened butter
- 1/2 cup brown sugar
- 1 tbsp cinnamon
Glaze
- 4 oz cream cheese softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk
Combine flour, sugar, baking powder, and salt in a mixing bowl. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Stir in buttermilk until the dough just comes together.
On a floured surface, press the dough into a 10x12-inch rectangle. Spread softened butter over the surface, then sprinkle with brown sugar and cinnamon. Roll tightly into a log and chill for 15 minutes.
Preheat the mini waffle maker to medium heat. Slice the chilled dough into 1-inch rounds and place them in the waffle iron. Cook for about 3 minutes or until golden brown and crispy.
Whisk together the softened cream cheese, powdered sugar, vanilla, and milk until smooth. Drizzle over warm waffles and serve immediately.
