For the Cookie Dough
- 1 cup butter softened
- 1/2 cup brown sugar packed
- 2 tsp vanilla extract
- 1 large egg
- 2 cups all-purpose flour
- 1 tbsp cinnamon
- 3/4 cup chopped walnuts
- 1/4 cup sour cream
For the Streusel Topping
- 1/2 cup flour
- 1/3 cup sugar
- 2 tsp cinnamon
- 1/4 tsp salt
- 4 tbsp cold butter cut into cubes
Whisk together 1/2 cup flour, 1/3 cup sugar, 2 tsp cinnamon, and 1/4 tsp salt. Cut in 4 tbsp cold butter until crumbly. Stir in chopped walnuts. Chill for 15 minutes.
In a large bowl, beat butter and brown sugar until fluffy (about 3 minutes). Add the egg and vanilla extract, mixing well.
In a separate bowl, whisk together flour, cinnamon, and salt. Gradually add to wet ingredients, mixing until just combined. Fold in sour cream for extra moisture.
Scoop 2-tablespoon portions of dough onto a parchment-lined baking sheet. Roll each ball in the chilled streusel, pressing gently to adhere.
